Nichi Nichi x Domaine Sakura

Pursuing sake brewing that brings out the smooth and deep flavor of the water that has been poured into the basin of Kyoto, we brew sake that can be enjoyed more deliciously.

This sake is brewed with Kimoto method, using Kameno-o from Domaine Sakura grown in Sakura City, Tochigi Prefecture, which is the domaine cultivated by Senkin Brewery. The ancient purebred rice is used to produce most of the sake that Senkin makes.

On the label, a sea turtle, which is a symbol of good luck in Hawaii, is drawn, and sending you the wish “I wish you all good things.”

Nichi Nichi was founded in 2021 by Mr. Hidehiko Matsumoto. Mr. Hidehiko left his 250-year-old Matsumoto Sake Brewery at the end of 2020, where he worked as the brewmaster.

Hidehiko’s goal is to express the “pure and natural umami” from the rice. He believes rice is important and that there’s been too much focus on brewing rather than rice farming. In a modern throwback to old ways, his team grows rice and brews the sake, enabling greater control over the end product.
