Ryusen is Juyondai’s most premium label, and currently the most sought-after sake in Japan by market price. It is made using Yamada Nishiki, polished to 35%. This sake has an aromatic floral taste and only 200 to 300 bottles are produced per year. Ryusen is obtained using the Shichitare Nijukkkan method, which refers to only obtaining the finest sake (figuratively 7 drops) from 75kg of rice, a method unique to Juyondai. Ryusen won the super premium gold award at Sake Competition 2019.
